The best laid plans…


Planning to make a salad with some fennel but, predictably as it was out of season, there was none to be seen.

I ended up with this salad instead.

Dressing:

lime juice

olive oil

soy sauce


Salad:

fresh rocket leaves

handful fresh basil leaves

cherry tomatoes

salt and freshly ground black pepper


Heat a pan with a little oil. When it’s hot add the cherry tomatoes. Leave them there without moving the pan from 3-5 minutes. Toss in the basil leaves and toss them in the pan once. The tomatoes must be burnt on one side and raw on the other,

Serve the tomatoes in a bed of rocket leaves.
